Very Veggie Stir Fry

Mighty Tip

Washing and preparing vegetables in advance may increase your likelihood of using them before they go bad!

So many veggies in this stir fry, even down to the cauliflower rice! This recipe is made to be lower in sodium by using coconut aminos instead of soy sauce. To make life easier, wash and cut your vegetables before starting to cook because this dish comes together pretty quickly! Oh, did I mention I finally got to use my air fryer for this one?!


Air Fried Ginger Tofu

Ingredients

Directions

  1. Cut the tofu into ~1/2 inch cubes.

  2. Place the cubed tofu in a large plastic bag. Add the ginger dressing and coconut aminos. Let marinate for 30 minutes (or longer).

  3. Spray the bottom of the air fryer with a very light layer of oil. Add the marinated tofu.

  4. Air fry at 390 degrees for 14 minutes, or until crispy (time may vary based on air fryer). Pause and shake up the tofu every 5 minutes.

Veggie Stir Fry

Ingredients

  • 1 tbsp avocado oil, or sub olive oil

  • 1 tsp minced garlic

  • 1 cup broccoli florets

  • 1 cup frozen pepper and onion blend ($0.77 for a big bag at Walmart) or 1/2 onion and 1/2 bell pepper

  • 1 small to medium zucchini, chopped

  • 1/4 cup carrots, chopped

  • 2 cups cremini mushrooms, sliced

  • 1 1/2 cups cauliflower rice

  • 2 tbsp coconut aminos

  • 1 tbsp ginger dressing

  • Umami seasoning, optional but delicious

  • Black pepper

  • Sesame seeds for serving

Directions

  1. Heat olive oil in large skillet or wok.

  2. Sauté broccoli, onion and pepper blend, carrots, garlic, and black pepper to taste.

  3. Add zucchini, mushrooms, 1 tbsp of coconut aminos, and umami seasoning to taste.

  4. Add cauliflower rice and ginger dressing. Stir until cauliflower rice is soft and turn off heat.

  5. Stir in the other tbsp of coconut aminos and air fried ginger tofu.

  6. Serve! Top with a drizzle of extra ginger dressing and sesame seeds.

 

Leftovers: I froze individual servings and have been eating them as an easy, pre-made lunch/dinner!
