This recipe uses yogurt to act as an acid to activate baking soda AND to give the bread moisture!

This moist healthy banana bread recipe is made in ONE bowl. What more can you ask for?! When one of my best friends asked for a banana bread recipe, I figured I would make this recipe as easy as possible. So here is my EASY banana bread recipe because you just need a single bowl! Essentially we are combining the wet ingredients, then adding the dry ingredients, then adding chocolate chips (unless you for some reason opt out of this delicious addition), and baking! INGREDIENTS

  • 4 ripe bananas

  • 1/2 cup melted coconut oil (may sub for another oil such as olive oil)

  • 2 eggs

  • 1/2 cup plain Greek yogurt

  • 1 tsp vanilla extract

  • 3/4 cup sugar

  • 1 3/4 cup flour

  • 1/4 tsp baking soda

  • 1 tsp baking powder

  • 3/4 cup chocolate cups (I used dark!) + a few for topping, of course!

DIRECTIONS

  1. Preheat the oven to 350 degrees Fahrenheit.

  2. Add bananas to a large bowl. Mash with a masher or use a fork.

  3. Add the remaining wet ingredients and sugar to the bowl — coconut oil, eggs, Greek yogurt, vanilla extract, sugar. Whisk together until completely mixed.

  4. Add dry ingredients, except chocolate chips, to the bowl — flour, baking soda, baking powder. Mix with a spoon just until almost completely combined. Be careful not to overmix so that the bread will rise well.

  5. Add chocolate chips to the batter and finish mixing. Again, just until all ingredients are completely combined.

  6. Pour the batter into a greased loaf pan. Top with a few extra chocolate chips!

  7. Bake at 350 degrees for 50-60 minutes. Baking times sometimes vary by oven and dish. My bread/oven takes 1 hour to bake!
