Raspberries are in season in the summer & fall!

Raspberry Baked Oatmeal because we are going to spice up the usual oatmeal routine and make baked oats instead. We are making it luxurious by adding raspberries because it is SUMMER TIME (almost!) and that means FRUIT, FRUIT, FRUIT! But really, I can never seem to get myself to eat the same amount of fruit in the winter as the summer! Anyone else??

INGREDIENTS

  • 3/4 cups oats (rolled/old fashioned)

  • 1 tbsp ground flax seed

  • 1 tsp cinnamon

  • 1/2 tsp baking soda

  • OPTIONAL: vanilla protein powder (1/2 to 1 serving)

  • 2/3 cup milk of choice (I used almond, you do you)

  • 1/3 cup fresh or frozen raspberries (I used fresh)

    • Option to add a couple extra for topping!

  • OPTIONAL: maple syrup to taste, to be added during batter prep or after baking

DIRECTIONS

  1. Preheat the oven to 350 degrees Fahrenheit.

  2. Add oats, flax, cinnamon, and baking soda to a bowl. Mix! [Option here to add vanilla protein powder and mix again.]

  3. Add the milk and mix! [Option here to add maple syrup to create a sweeter product, can also be added as a topping.]

  4. Add the raspberries and gently mix.

  5. Transfer to an oven safe dish/bowl. Here is where you can add a couple extra raspberries on top if you chose to do so!

  6. Bake at 350 degrees for 20 minutes. ENJOY!
