The varying colors of fruits and vegetables indicate the varying micronutrients in them — just look at all the color in these summer rolls!

Super fresh and perfect for the summertime! These are vegan summer rolls and they are made with tofu to still provide protein to the meal. Tofu is a vegan protein option made from soybeans and it can be eaten raw or cooked! In this recipe, it is used raw, which can help speed up prep time. These summer rolls are filled with fresh ingredients to fuel your body in a delicious and nutritious way! I hope you love them as much as I do!


INGREDIENTS

  • Rice paper

  • 1 red bell pepper, julienned

  • 1 head of butter lettuce, washed

  • 1 cup purple cabbage, thinly sliced

  • 1 avocado, thinly sliced

  • 1 mango, julienned

  • 1 14 oz block of tofu, drained, pressed is optional, julienned

DIRECTIONS

  1. Prepare vegetables/fruit/tofu as described in the “Ingredient” list above before starting the assembly of the summer rolls.

  2. Put water into a plate or round pie dish and have a second plate with no water ready next to it.

  3. Dip the rice paper very briefly into the water, just enough to get the entire paper wet. Place it onto the plate with no water.

  4. Add your choice of fillings to the roll (I did 1-2 pieces of everything each time!).

  5. At this point you can make your own peanut sauce or buy one (which is what I did)!

  6. ENJOY! Share with friends family!
