Applesauce can be used as a substitute for oil and butter in recipes to lower saturated fat content!

Allll about adding veggies in at breakfast on this page! And if we can pair that with dark chocolate all in one muffin then even better! I hope you enjoy these chocolate chip zucchini muffins as much as I do!


Ingredients

  • 1 cup flour

  • 1 cup oats

  • 1 tsp baking powder

  • 1/3 cup applesauce

  • 1/2 cup maple syrup

  • 2 eggs

  • 1 cup thinly shredded zucchini (1 small to medium zucchini)

  • 1/3 cup chocolate chips

Directions

  • Preheat oven to 350 degrees Fahrenheit.

  • Squeeze out the excess liquid from the shredded zucchini with a paper towel.

  • Mix together flour, oats, and baking powder in a large bowl.

  • Add in applesauce, maple syrup, and eggs. Mix together just until combined.

  • Stir in zucchini and chocolate chips.

  • Separate into muffin cups (I used JUMBO muffin tins!) and bake at 350 for 25 minutes. Enjoy!

    • This recipe made 5 jumbo muffins — for smaller sized tins check doneness earlier. For mini muffins, check at 8 - 10 minutes. For medium/”regular” muffins, check at 15 minutes.
