10-Minute Kale Caesar Salad

Mighty Tip

Eating “healthy” doesn’t have to be time consuming! Making quick, larger batch recipes like this one can provide a nutritious option on hand.

Okay, okay.. you might be over the kale hype, or maybe you were never really vibing with it to begin with, HOWEVER, this recipe is pretty dang tasty and I realllly encourage you give it a shot! For all my people who already love kale: you will love this. period.

Your time is important. And just like you don’t have all the time in the world to read a huge long page on why I think this recipe is the bees knees, you also probably don’t want to spend your whole evening preparing a salad. That being said, we can dive in to what you will need for this recipe:

Kale. Duh, this one is a given. If you want to sub out different greens go ahead, but I strongly believe the kale adds a tasty bite!

Chicken. Don’t worry, we’re still rockin’ with the 10-minute meal prep here. I used the chicken breast from a rotisserie chicken, but you can also plan ahead and prepare chicken breast your favorite way if you prefer. The cool thing about cooking — it’s totally flexible to YOU and what YOU enjoy! If you don’t eat chicken or just want to change it up, you can definitely add shrimp or salmon instead!

Shaved Parmesan. The big flakes from the shaved parmesan are a game changer in a Caesar salad. You can find them in the usual dairy/cheese area from brands such as Sargento. You can also buy the nicer parmesan, too, which is typically located by the deli area!

Croutons. Is it even Caesar salad without croutons?

Cherry tomatoes. These are a tasty addition and a way to add extra nutrients. I love cherry tomatoes, so no surprise I found a way to add them to this salad. I cut them into thirds so that they were a bit more bite-sized.

Caesar dressing. There are about a billion different options in your average grocery store, so feel free to go crazy! I chose the only one that was low-fat because I typically like a lot of dressing and can’t really compromise on that, so knowing that oil is a fat which has a high calorie content, I opted for one with a bit less fat!


Ingredients

  • 5 cups of kale

  • 1 cup of cut or shredded chicken breast

  • 1 cup of shaved parmesan cheese

  • 1 cup of croutons

  • 1 - 2 cups cherry tomatoes, sliced into thirds

  • 1 cup of low-fat Caesar dressing (can increase or decrease amount based on your preference)

Directions

  1. Wash kale and add to a large bowl.

  2. Add 1/2 cup Caesar dressing to coat the kale.

  3. Add in the chicken, tomatoes, croutons (see note below), and parmesan cheese. Mix.

  4. Add in the remaining 1/2 cup dressing and mix until all ingredients are coated.

  5. Serve & enjoy!

    NOTE: If you are planning for leftovers, add the croutons at the time of serving! They will get soggy from the dressing when stored as leftovers. The kale will not get soggy from the dressing for several days.
