Pair protein & carbohydrates for snacks to stay more full and satisfied!

It is pumpkin season in full swing over here! This next pumpkin recipe is PUMPKIN PROTEIN BARS! Combining pumpkin with a functional snack! This recipe is full of whole grains from the oats, healthy fats from the pecans, & now a veggie (aka pumpkin) has been snuck in!

This recipe CAN be made without the added protein powder. I mention this because not everyone loves the taste/texture of protein powder in recipes AND not everyone keeps protein powder on hand! The difference in the nutritional content (see bottom of page for nutritional breakdown of recipe) will be less calories & less protein per serving.

INGREDIENTS

  • 3 cups old fashioned or quick oats (recipe works with both)

  • 2 scoops vanilla protein powder (optional)

  • 1/2 cup pumpkin

  • 2 tsp pumpkin pie spice

  • 3 egg whites

  • 1/4 cup maple syrup

  • 1/2 cup crushed pecans

  • 1/4 cup mini chocolate chips

  • 2 crushed graham crackers, for topping

DIRECTIONS

  1. Preheat oven to 350 degrees Fahrenheit.

  2. In a large bowl, combine oats & protein powder. Stir.

  3. Add in egg whites, maple syrup, & pumpkin pie spice. Stir to combine.

  4. Add in pecans & mini chocolate chips. Stir.

  5. Spray an 8x8 dish with baking spray.

  6. Dump the batter into the 8x8 dish and press into an even layer.

  7. Top with the crushed graham cracker. Lightly press the graham cracker into the top.

  8. Bake at 350 for 20 minutes.

  9. Remove from the oven, cut into 10 even bars, & enjoy!
