Nut-Free Banana Oat Energy Balls
NUT-FREE energy balls for all my nut-free friends and those who want a cheaper version of energy balls! This recipe is only 4 ingredients and can be made in 1 bowl — how is that for quick and easy?! To cut down on sugar, this recipe uses bananas for its sweetener and also uses dark chocolate chips. The higher that percent cacao (i.e. 80% cacao), typically the less sugar is added into your chocolate!
In this recipe, you will see an ingredient called flaxseed. You will be using ground flaxseed for this recipe because when the flaxseed is ground, it is easier for our bodies to obtain the nutrients from the flaxseed. These awesome nutrients include the omega-3 fatty acid, alpha-linolenic acid (ALA) & also fiber! Note, that since this recipe does have a lot of fiber when you use both flaxseed and oats it can make you go, as in make you go. So, it is important to trial just a few energy balls at a time AND be sure to stay hydrated! Fiber is great and all but it is important to have enough water!
INGREDIENTS
2 ripe/overripe bananas
1 1/2 cup oats
1/4 cup ground flaxseed (may also be called “milled” flaxseed")
1/2 cup dark chocolate chips
DIRECTIONS
Preheat oven to 350 degrees Fahrenheit.
Mash bananas in a medium-sized bowl. Can use a banana masher or fork.
Add oats, flaxseed, and dark chocolate to the mashed bananas. Stir well until thoroughly combined.
Place parchment paper on a baking sheet (or spray baking sheet very lightly with oil).
Bake at 350 for 10 minutes. The outside should be firm and golden brown in color.
